January Update

The hunt for a new bakery home continues! Unfortunately I haven’t had many promising leads (yet). Nonetheless, here’s a little progress update…

This first week of the month has been spent packing up the bakery and moving its entirety into a sizable storage unit. It’s like one big, risky, very expensive game of Tetris. Fun, right?! The most stressful part was moving all the equipment (refrigeration, freezers, mixer, oven, etc) but thankfully that went as smoothly as those things can go and everything fits snugly into the unit for its hibernation.

A lot of you have reached out to ask what specifics I’m looking for in a space, should you stumble across something that might be a good fit. So here’s a general idea of a *dream space* :

  • Location: Central Seattle — specifically north of Capitol Hill i.e. Fremont/Ballard area would be ideal.

  • Size: Between 600-1000 square feet, but this is somewhat space dependent.

  • Price: Ideally $1000-3000/month all in, but I’d consider slightly more for the right fit.

  • Lease Term: 2-3 years with renewal options.

  • Specifics: Retail opportunity (even an unconventional one!) would be ideal, but isn’t essential. Production is the primary focus. Not looking for a shared space unless it’s with someone who does not produce the same products as me (this is an intellectual property concern and is for the protection of my business).

I am so touched by how involved you want to be in this process, and can’t begin to express my gratitude for all the supportive messages and kindness. It’s been a very emotional time, and I miss baking for you all so much — and it’s only been a few weeks! Hopefully I’ll have more to share next month.
